For commercial coffees, these processes usually take place at a mill (or \"beneficio\" in much of Latin America). The most common processes are described below:\u003c\/p\u003e\n\u003cul\u003e\n\u003cli\u003eWashed process - Most coffees you drink are prepared this way. Using a mechanical process and flowing water, the skin and pulp of the coffee cherries are removed. The seeds that are left behind are dried in the sun or with mechanical drying equipment.\u003c\/li\u003e\n\u003cli\u003eHoney process - In this process the skin is removed, along with some of the pulp. These pulp-coated seeds are then dried, usually by the sun. The additional moisture in the pulp results in longer drying times, but during this time, additional flavors are allowed to penetrate in to the seeds. The amount of pulp left behind can vary, resulting in slightly different flavors.\u003c\/li\u003e\n\u003cli\u003eNatural process - In the Natural process, the entire fruit is dried by the sun. These take the longest time to dry, again resulting in additional flavor penetration, including flavors that come from the skin of the cherries. Technically, no water is used, but this is often done at the \"wet milling\" facilities.\u003c\/li\u003e\n\u003c\/ul\u003e\n\u003cp\u003eThe Honey and Natural processes (along with more exotic processes like anaerobic fermentation) require more processing time and higher levels of care, leading to higher market prices for the farmers.\u003c\/p\u003e\n\u003ch4\u003e\"Dry Milling\"\u003c\/h4\u003e\n\u003cp\u003eAfter the seeds are dried, commercial coffees go through a secondary milling process where the seeds (now coffee beans) are sorted and graded by quality and size.
